Recipe: Easy Organic 3 Cheese Mac and Cheese

Yesterday she had a lot of protein with her lunch so I figured I would give her a vegetarian dinner, so I made her a quick and easy mac and cheese with a side of broccolini aka baby broccoli. I like using broccolini because the florets are smaller and the stalks are longer so it makes it easier for Layla to feed herself. For the mac and cheese, I had three different types of organic cheese so I mixed it with some pasta, milk and sliver of butter and dinner was made. Layla loved it!

Three cheese organic mac and cheese:

1. Boil 1/2 a cup of organic pasta (I like using Trader Joes Organic Vegetable Radiatore pasta) until cooked completely and drain.

2. Add 2 tablespoons of each: shredded mozzarella, shredded monterey jack and fresh parmesan (I only use organic cheeses, but you can substitute with any type of cheese you like)

3. Add 1 teaspoon of butter and 4 tablespoons of milk

4. Stir until creamy

5. Serve with your little ones favorite veggies and/or protein
